In a large glass trifle bowl, combine the strawberry gelatin with 2 cups of boiling water. Stir until the gelatin is completely dissolved. (5 minutes)

In a separate bowl, mix together the sweet sherry wine, the reserved syrup from the fruit cocktail, and enough cold water to equal 1 3/4 cups. Add this mixture to the dissolved gelatin and stir well. (2 minutes)

Gently fold in the cubed sponge cake and drained fruit cocktail into the gelatin mixture. Ensure the cake is evenly saturated. Cover the bowl with plastic wrap and refrigerate for at least 4 to 5 hours, or preferably overnight, to allow the gelatin to set. (5 hours)

Prepare the instant vanilla pudding mix according to the package directions, using the amount of milk specified to yield 2 cups of custard. Once the gelatin layer has set, pour the vanilla custard evenly over the top. Return the trifle to the refrigerator and chill for another hour to allow the custard to set slightly. (1 hour)

Just before serving, spread the thawed whipped topping evenly over the custard layer. Garnish with fresh strawberries or maraschino cherries, if desired. (5 minutes)

For a richer flavor, consider using a good quality sherry or Madeira wine.
If you don't have sponge cake, pound cake or ladyfingers can be substituted.
To prevent the cake from becoming too soggy, you can lightly toast the sponge cake cubes before adding them to the gelatin mixture.
Feel free to experiment with different flavors of gelatin and fruit to customize the trifle to your liking.
Make sure to let the trifle chill completely for the best flavor and texture.
