For a richer flavor, consider adding a pinch of red pepper flakes along with the garlic.
Beet greens are best enjoyed fresh, so cook them soon after purchasing or harvesting.
If you don't have fresh lemon, a splash of white wine vinegar can be used as a substitute.
To make it a complete meal, add toasted pine nuts or walnuts for added crunch and protein.
