Evenly press the remaining 2 ounces of shredded Cheddar cheese over the entire surface of the 'carrot', ensuring it's fully coated. (5 minutes)

Neaten the presentation by removing any excess cheese from the plate with a damp napkin. Cover the cheese log with plastic wrap and refrigerate for a minimum of 2 hours to allow the flavors to meld and the log to firm up. (2 hours)

For a spicier kick, use a hot taco seasoning or add a pinch of cayenne pepper.
If you don't have a food processor, finely chop the olives by hand.
To make ahead, the cheese log can be prepared up to 2 days in advance and stored in the refrigerator.
Experiment with different types of cheese for the coating, such as a smoked Gouda or a colorful Colby Jack.
For a vegetarian option, ensure your cream cheese and cheddar cheese are made with vegetable rennet.
