For a richer flavor, use brown butter instead of melted butter. Feel free to experiment with other canned or fresh fruits. Berries, apples, or a mixed fruit combination work wonderfully. If you don't have self-rising flour, you can make your own by combining 1 cup all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt. Adjust the amount of sugar depending on the sweetness of your fruit. If the topping is browning too quickly, tent the cobbler with foil during the last 10 minutes of baking.
