Slowly pour in the white wine, scraping up any browned bits from the bottom of the pan. Gradually whisk in the chicken stock, then add the ground sage, salt, and pepper to taste. Bring the sauce to a gentle simmer and cook, stirring occasionally, until thickened (about 5 minutes). Remove from heat and stir in the heavy cream.

Pour the mushroom sauce evenly over the chicken in the casserole dish, gently stirring to combine. Cover the dish tightly with aluminum foil.

For a richer flavor, substitute dry sherry or Madeira for the white wine.
Feel free to experiment with other mushroom varieties such as maitake or enoki.
If the sauce becomes too thick, add a splash more chicken stock to adjust the consistency.
To add a crispy topping, sprinkle breadcrumbs over the casserole before baking.
