Combine curry powder, salt, mayonnaise, and lemon juice in a large bowl. Add cooked pasta and toss to coat. Mix in apple, raisins, green onion, carrots, tofu, and pine nuts. (5 minutes)

For an extra layer of flavor, toast the pine nuts in a dry pan over medium heat until golden brown. Allow to cool before adding to the salad.
Feel free to substitute the raisins with sultanas or dried cranberries. Almonds or walnuts can be used instead of pine nuts.
For a creamier dressing, add a tablespoon of plain yogurt or sour cream.
If you're not a fan of tofu, you can substitute it with cooked chicken or shrimp.
This salad is best served chilled, allowing the flavors to meld together. Prepare it a few hours ahead of time and refrigerate.
