Follow The Directions

01

Step

Prepare the Cucumber Ribbons: Using a mandoline or a sharp knife, carefully slice the cucumber halves lengthwise into thin, 1/8-inch-thick ribbons. (Approximately 15 minutes)

02

Step

Create the Chicken Salad: In a mixing bowl, combine the flaked chicken breast, softened Neufchâtel cheese, finely chopped tomato, green onions, mayonnaise, red pepper flakes, and garlic salt. Mix thoroughly until all ingredients are well incorporated. (Approximately 10 minutes)

03

Step

Assemble the Roll-ups: Lay the cucumber slices flat on a clean work surface. Spoon about 2 teaspoons of the chicken mixture onto the base of each cucumber ribbon. Gently roll the cucumber around the filling to create a neat roll-up. Secure each roll with a toothpick to maintain its shape. (Approximately 20 minutes)

04

Step

Garnish and Serve: Arrange the cucumber roll-ups upright on a serving plate. Insert a Pretzel Crisp into the chicken mixture of each roll-up, pushing it in about halfway for a decorative and crunchy element. Serve immediately and enjoy! (Approximately 5 minutes)

For an extra burst of flavor, consider adding a squeeze of fresh lemon juice or a dash of hot sauce to the chicken mixture.
If you don't have Neufchâtel cheese on hand, cream cheese or even Greek yogurt can be used as a substitute.
To prevent the cucumber roll-ups from becoming soggy, avoid assembling them too far in advance. Ideally, prepare them just before serving.
Experiment with different toppings! Sesame seeds, chopped nuts, or a sprinkle of fresh herbs can add visual appeal and enhance the taste.

I made these for a light lunch and they were perfect. I added a little bit of Dijon mustard to the chicken mixture for a bit of tang.

My cucumber slices kept breaking. Any tips? Maybe I sliced them too thin. I will try again!
