Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook until golden brown and cooked through, approximately 3-5 minutes per side. Remove the chicken from the skillet and set aside on a plate. Allow to rest for a couple of minutes, then slice into strips or chunks.

Create the Tuscan Sauce: In the same skillet, add the heavy cream, chicken broth, grated Parmesan cheese, the remaining garlic powder, and Italian seasoning. Whisk continuously over medium heat until the sauce begins to thicken slightly, about 3 minutes. Stir in the spinach and sun-dried tomatoes. Simmer until the spinach wilts and the sauce reaches your desired consistency, another 3 minutes. If the sauce becomes too thick, add a splash of the reserved pasta water.

Combine and Serve: Return the sliced chicken to the skillet with the creamy Tuscan sauce. Cook until the chicken is heated through, about 2 minutes. Serve immediately over the cooked penne pasta. Garnish with extra Parmesan cheese and fresh herbs, if desired.

For a richer flavor, consider using roasted garlic instead of garlic powder.
If you don't have sun-dried tomatoes on hand, feel free to substitute with fresh cherry tomatoes, halved.
To add a little heat, incorporate a pinch of red pepper flakes into the sauce.
This dish pairs well with a crisp white wine, such as Pinot Grigio or Sauvignon Blanc.
