For a spicier kick, leave some seeds in one of the Anaheim peppers! If you don't have Anaheim peppers, poblano peppers are a great substitute. To toast the pumpkin seeds, spread them in a single layer on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until lightly golden and fragrant. Consider adding a squeeze of lime juice for extra brightness. This dressing is also delicious as a dip for vegetables or as a sauce for grilled chicken or fish.
