Incorporate ginger, turmeric, saffron, and cayenne pepper; sauté until fragrant (30 seconds to 1 minute).

Pour in broth; bring to a simmer over medium-high heat. Reduce heat to low and simmer, partially covered, until cauliflower is tender (about 10 minutes).

Using an immersion blender or traditional blender, purée until completely smooth (30 seconds to 1 minute). If using a traditional blender, vent it either by removing the lid's pop-out center or by lifting one edge of the lid. Drape the blender canister with a kitchen towel. To 'clean' the canister, pour in a little half-and-half, blend briefly, then add to the soup.

Return to pan (or a soup pot); add enough half-and-half to achieve a soup-like consistency that is thick enough to support a garnish. Season with salt and pepper to taste. Heat through, ladle into bowls, garnish, and serve immediately.

For a vegan option, substitute the chicken broth with vegetable broth and use a plant-based milk alternative instead of half-and-half.
The saffron threads add a subtle floral note and vibrant color; don't skip them if possible!
If you don't have sea scallops for garnish, try a drizzle of chili oil or a sprinkle of toasted pumpkin seeds.
