For a smoother souffle, blend the cottage cheese before adding it to the mixture.
Experiment with different cheeses! Gruyere, Monterey Jack, or even a sharp provolone would be delicious.
If you don't have bacon on hand, try using ham, sausage, or even some sauteed vegetables like mushrooms or spinach.
