For a richer flavor, try using bone-in, skin-on chicken thighs. Cook them ahead of time, shred the meat, and use the rendered chicken fat in place of some of the butter. Add a sprinkle of paprika on top before baking for a beautiful color and a hint of smoky flavor. Feel free to experiment with other vegetables, such as chopped celery, onions, or carrots. If you don't have half-and-half, you can use a mixture of milk and cream.
