You can also add a cup of shredded cheddar cheese during the last 30 minutes of cooking for extra creaminess. Adjust the amount of hot sauce and chili powder to control the spice level. For a milder chowder, omit them altogether. Conversely, finely diced jalapeño pepper can be substituted for the canned green chiles. If you prefer a smoother texture, use an immersion blender to partially blend the chowder before serving. Be careful not to over-blend, as it can become gluey. Garnish each bowl with a sprinkle of fresh parsley, a dollop of sour cream, or a few crumbled tortilla chips for added flavor and texture.
