In a medium-sized bowl, gently combine the diced tomatoes, minced onion, chopped cilantro, minced jalapeño, lime zest, lime juice, minced garlic, and salt. (5 minutes)

Stir all ingredients together gently until well combined, being careful not to bruise the tomatoes. (2 minutes)

Cover the bowl tightly with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together. For an even more intense flavor, chill for up to 4 hours. (1-4 hours)

Before serving, give the pico de gallo a final gentle stir and adjust the salt to taste. (2 minutes)

For a sweeter pico de gallo, add a pinch of sugar.
If you don't have Roma tomatoes, you can substitute with another variety of ripe, flavorful tomato.
To reduce the heat, remove the seeds and membranes from the jalapeño before mincing. For extra heat, leave them in!
This pico de gallo is best served fresh, but it can be stored in an airtight container in the refrigerator for up to 2 days.
