Place the well-chilled ground pork in a mixing bowl. Break it up slightly with your hands. Pour the spice mixture over the pork and knead thoroughly to ensure even distribution. (Approximately 5 minutes)

For best flavor, refrigerate the chorizo mixture for at least 8 hours or overnight to allow the flavors to meld. If using immediately, proceed to the next step.

Heat a nonstick skillet over medium heat. Add the chorizo and cook, stirring frequently, until browned and crumbly, and the pork is cooked through. (Approximately 10 minutes)

For a smokier flavor, consider using smoked paprika in addition to, or in place of, some of the New Mexico chile powder.
Adjust the amount of red pepper flakes to your preferred level of spiciness.
Ensure the pork is very cold before mixing to prevent the fat from rendering too much during the kneading process.
If you don't have Mexican oregano, regular oregano can be substituted, but the flavor will be slightly different.
This chorizo can be stored in an airtight container in the refrigerator for up to 3 days.
