For a richer flavor, toast the walnuts before chopping. You can also experiment with different types of nuts, such as pecans or almonds.
If you prefer a chewier cookie, use Medjool dates. These tend to be softer and moister than Deglet Noor dates.
The dough will be sticky, but resist the urge to add more flour. The cookies will firm up as they bake and cool.
Storing these in the refrigerator keeps them nice and firm and chewy.
