Follow The Directions

01

Step
7 mins

In a large saucepan or Dutch oven, heat olive oil over medium heat. Add minced onion and garlic. Cook, stirring occasionally, until softened and fragrant, about 5-7 minutes.

02

Step
10 mins

Pour in chicken broth and add the cubed chicken. Bring to a simmer, then reduce heat to low, cover, and cook until chicken is cooked through and no longer pink, approximately 8-10 minutes.

03

Step
5 mins

In a small bowl, combine chopped chipotle peppers with half of the reserved adobo sauce. In a separate bowl, gently mix diced tomatoes and chopped cilantro.

04

Step
3 mins

Slowly stir the chipotle pepper mixture into the soup, adding a spoonful at a time and tasting after each addition until the desired level of spiciness is reached. (Important: The adobo sauce is potent, so add gradually!)

05

Step
2 mins

Remove the saucepan from heat. Stir in the tomato and cilantro mixture. Ladle the soup into bowls and garnish with extra cilantro, if desired. Serve hot with your favorite crusty bread or toppings.

For a richer flavor, consider using homemade chicken broth.
If you don't have fresh cilantro, you can use 1 tablespoon of dried cilantro, but fresh is definitely recommended for the best flavor.
Adjust the amount of chipotle peppers and adobo sauce based on your preferred level of spiciness. Start with a small amount and add more to taste.
A squeeze of lime juice at the end brightens up the flavors beautifully.
Leftovers can be stored in the refrigerator for up to 3 days. The flavors often meld and improve over time!
