Roasting the corn brings out its natural sweetness and adds a smoky char that complements the chipotle peppers.
For a milder salsa, remove all the seeds and membranes from the jalapeño peppers. For extra heat, add more of the reserved seeds to taste.
Fresh lime juice is essential for the bright, zesty flavor of this salsa. Bottled lime juice will not provide the same results.
This salsa can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop over time.
