Add diced tomato, sliced carrot, and celery to the skillet. Cover and cook for an additional 5 minutes, allowing the vegetables to soften slightly and the flavors to meld.

Continue cooking the chicken until it is no longer pink at the bone and the juices run clear when pierced with a fork. An instant-read thermometer inserted near the bone should read 165°F (74°C).

Gently fold in the trimmed snow peas. In a separate small bowl, whisk together cornstarch and water until smooth. Pour the cornstarch slurry into the skillet.

Allow the mixture to simmer for about 5 minutes, stirring occasionally, until the sauce thickens to your desired consistency. Serve hot over rice.

For a richer flavor, marinate the chicken in oyster sauce and a little soy sauce for at least 30 minutes before cooking.
If you prefer a spicier dish, add a pinch of red pepper flakes or a finely chopped chili pepper to the skillet along with the garlic and onion.
To make it a complete one-pan meal, add some diced potatoes along with the carrots and celery.
Feel free to substitute other vegetables you have on hand, such as bell peppers or mushrooms.
Adjust the amount of cornstarch slurry depending on how thick you like your sauce.
