For a richer flavor, use clarified butter. To make your own clarified butter, melt butter in a saucepan over low heat. Skim off the foam from the top. Carefully pour the clear butter into a clean container, leaving the milky solids behind. If the sauce becomes too thick, add a splash of chicken broth or white wine to thin it out. Serve with a side of steamed green beans or asparagus for a complete and balanced meal. A crisp green salad would also be a lovely addition. Feel free to adjust the amount of Dijon mustard to your liking. For a spicier kick, use a coarse-ground Dijon. The sauce can be made ahead of time and stored in the refrigerator for up to 2 days. Reheat gently before serving.
