Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the chopped red onion and sauté until softened and translucent, about 5 minutes.

Add the chopped chicken breast to the pot and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes.

In a blender or food processor, combine the chopped cilantro, peeled garlic cloves, and 1/3 cup of water. Process until a smooth, vibrant green puree forms, about 1-2 minutes.

Pour the cilantro puree into the pot with the chicken and onions. Cook and stir for about 5 minutes, allowing the flavors to meld and the puree to heat through. The mixture will become very fragrant.

Add enough water to the pot to cover all the ingredients, ensuring the chicken and vegetables are submerged. Stir in the drained hominy, uncooked rice, and chicken bouillon cube.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 20 minutes, or until the rice is tender and the chicken is cooked through. Check the water level periodically and add more water as needed to maintain your desired soup consistency.

Once the rice is tender, season the soup with salt and freshly ground black pepper to taste. Adjust seasonings as needed.

For a richer flavor, use chicken broth instead of water.
Feel free to experiment with other proteins, such as shrimp or a combination of chicken and shrimp.
If you prefer a spicier soup, add a pinch of red pepper flakes or a finely chopped jalapeño to the pot along with the onions.
Garnish with extra cilantro, a squeeze of lime juice, or a dollop of sour cream or Mexican crema before serving.
To make this soup vegetarian, substitute the chicken with white beans or mushrooms.
