For an extra kick, add a dash of hot sauce to the maple mayonnaise. If you don't have peanut oil, canola or vegetable oil can be substituted. Feel free to use your favorite type of cheese. Pepper jack would add a nice spice. For a healthier option, the chicken can be baked instead of fried. Bake at 400 degrees F (200 degrees C) for about 20-25 minutes, or until cooked through.
