Gently fold in the cherry preserves and vanilla extract until evenly distributed, being careful not to overmix. Taste and add more cherry preserves if desired for a more intense cherry flavor (approximately 1 minute).

For the best flavor, use high-quality cherry preserves with real fruit pieces.
Sifting the confectioners' sugar ensures a smooth and lump-free frosting.
If the frosting is too thick, add a teaspoon of heavy cream at a time until desired consistency is reached. If it's too thin, add a tablespoon of confectioners' sugar at a time.
This frosting can be made ahead of time and stored in an airtight container in the refrigerator for up to 3 days. Let it come to room temperature and re-whip before using.
