For a vegetarian option, omit the bacon and add a tablespoon of olive oil when sautéing the onion. Feel free to experiment with different cheeses. Goat cheese or ricotta would also be delicious. If you don't have an oven-safe skillet, transfer the mixture to a greased baking dish before baking.
