In a saucepan over medium heat, melt the butter. Add the chopped onion and cook, stirring occasionally, until softened and translucent (approximately 5 minutes).

Add the ground beef, Worcestershire sauce, salt, pepper, and garlic powder to the saucepan. Cook, breaking up the beef with a spoon, until it is browned and fully cooked (approximately 10 minutes). Drain any excess liquid from the beef mixture and set aside for 2 minutes.

Preheat a griddle or flat pan over medium heat and lightly coat with cooking spray.

Place one tortilla on the hot griddle. Sprinkle a generous amount of Colby cheese over the tortilla, followed by 1/4 of the cooked beef mixture. Top with 1 teaspoon of ketchup, 1 teaspoon of mustard, and 1 teaspoon of relish. Add another layer of Colby cheese and top with a second tortilla. Gently flatten the quesadilla with your hand or a spatula.

Carefully flip the quesadilla using a spatula and cook until the tortilla is golden brown and the cheese is melted and gooey (approximately 3-5 minutes per side).

Remove the quesadilla from the griddle and cut it into four wedges. Repeat the process with the remaining tortillas, beef mixture, cheese, ketchup, mustard, and relish.

For an extra layer of flavor, consider adding a thin layer of your favorite burger sauce or a slice of dill pickle to the quesadilla before cooking.
Feel free to experiment with different types of cheese, such as cheddar, Monterey Jack, or a blend of Mexican cheeses.
If you prefer a spicier quesadilla, add a pinch of red pepper flakes to the beef mixture or use a spicy mustard.
