Preheat oven to 350 degrees F (175 degrees C). Place buttercup squash halves in a baking dish, cut-side up. (5 minutes)

In a large bowl, gently toss the apples with lemon juice to prevent browning. Add all but 1 tablespoon of the chopped pecans, brown sugar, and cinnamon. Mix well to combine. (5 minutes)

Spoon the apple-pecan mixture generously into the cavities of the buttercup squash halves. Sprinkle the remaining 1 tablespoon of pecans evenly over the tops of the filled squash. Dot each squash half with 1 ½ teaspoons of butter. (10 minutes)

Bake in the preheated oven until the squash is tender and easily pierced with a fork, approximately 45 minutes. If the pecans begin to brown too quickly, loosely tent the baking dish with foil for the last 15 minutes of baking. (45 minutes)

Let cool slightly before serving. The squash can be served warm or at room temperature. (10 minutes)

For a richer flavor, consider browning the butter before dotting it over the squash. Simply melt the butter in a saucepan over medium heat and cook until it turns a nutty brown color. Let it cool slightly before using.
Maple syrup can be used instead of brown sugar for a different flavour profile.
