For a spicier kick, add a pinch of cayenne pepper to the chicken mixture. Feel free to substitute pepper jack or Colby jack cheese for the cheddar. If you don't have rotisserie chicken, you can use about 1.5 pounds of cooked and shredded chicken breast. To prevent the tater tots from burning, you can tent the casserole with foil during the last 10 minutes of baking. This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add about 10-15 minutes to the baking time if baking from cold. Serve with extra ranch dressing or blue cheese dressing for dipping.
