Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. (5 minutes)

Arrange phyllo cups on the prepared baking sheet. Place 1 piece of Brie cheese into each phyllo cup. Top each Brie piece with about 1/2 teaspoon of raspberry preserves. (5 minutes)

Bake in the preheated oven until the Brie is melted and slightly bubbly, about 7 minutes. (7 minutes)
For a festive touch, garnish with a fresh raspberry or a small sprig of thyme after baking.
Experiment with different preserves! Apricot, fig, or even a spicy pepper jelly would be delicious.
To prevent the phyllo cups from browning too quickly, you can tent them loosely with foil during the last few minutes of baking.
These are best served warm, shortly after baking. However, you can assemble them ahead of time and keep them refrigerated until ready to bake.
