Spread the mixture into the prepared pan in an even layer. Cover tightly with aluminum foil. (2 minutes)

Roast in the preheated oven, shaking the pan every 15 minutes to promote even cooking, for 45 minutes.

Remove the foil and continue to roast, uncovered, stirring occasionally, for an additional 30 minutes, or until the vegetables are tender and slightly caramelized.

For an even deeper flavor, consider marinating the vegetables in the balsamic mixture for at least 30 minutes before roasting.
Feel free to experiment with other vegetables, such as bell peppers, zucchini, or Brussels sprouts.
If you don't have fresh thyme, 1 teaspoon of dried thyme can be substituted.
Adjust the amount of balsamic vinegar to your taste preference. Some may prefer a tangier flavor.
