Incorporate Eggs and Potatoes: Transfer the dough to a mixing bowl. Spread it against the sides of the bowl to encourage cooling (approximately 5 minutes). Gradually incorporate the eggs, one at a time, using a spatula or wooden spoon. The dough will initially appear broken, but continue mixing until it becomes smooth, glossy, and very sticky. Gently fold in the mashed potatoes until evenly combined. Season with cayenne pepper, nutmeg, and additional kosher salt to taste. Mix until just combined.
