Bake in the preheated oven for 25 minutes. Arrange tomatoes, mushrooms, and garlic around chicken; sprinkle 2 tablespoons Parmesan cheese over chicken and vegetables. Continue baking until chicken is no longer pink in the centers and juices run clear, about 15 minutes more. An instant-read thermometer inserted into centers should read at least 165 degrees F (74 degrees C). (40 minutes)

Sprinkle remaining 2 tablespoons Parmesan cheese over chicken breasts; top each with 1 slice prosciutto and 2 to 3 slices Brie, arranged diagonally on top prosciutto. (5 minutes)

Bake until cheese is melted, 5 to 10 minutes. (10 minutes)

For a richer flavor, marinate the chicken breasts in the white wine and herb mixture for at least 30 minutes before baking.
Substitute the prosciutto with sliced artichoke hearts or sun-dried tomatoes for a vegetarian option.
Experiment with different cheeses! Fontina, Gruyere, or even a smoky provolone would be delicious alternatives to Brie.
If you don't have fresh tomatoes, canned diced tomatoes (drained) will work in a pinch.
Ensure chicken is cooked through by using an instant-read thermometer.
