In a mixing bowl, whisk together the buttermilk and 1/2 cup hot pepper sauce. Transfer the mixture to a resealable plastic bag. Add the chicken strips, ensuring they are fully submerged in the marinade. Seal the bag, removing any excess air. Marinate in the refrigerator for at least 1 hour, or preferably overnight for maximum flavor infusion. (Marinating: 1 hour minimum)

Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet and set aside. Remove the chicken strips from the marinade, allowing any excess to drip off. Discard the remaining marinade. (Prep Time: 5 minutes)

Prepare two separate dishes: one with the panko bread crumbs, and the other with the liquid egg substitute. Gently press each chicken strip into the bread crumbs to coat thoroughly, then shake off any excess. Dip the breaded strip into the egg substitute, ensuring it's fully coated, and then press it back into the bread crumbs for a second coating. Gently toss the coated chicken between your hands to remove any loose bread crumbs. Arrange the breaded chicken strips on the prepared baking sheet, ensuring they are not overcrowded. Lightly spray the chicken strips with cooking spray. (Coating: 15 minutes)

Bake in the preheated oven for 10 minutes. Carefully flip the chicken strips and spray the other side with cooking spray. Continue baking until the chicken is golden brown and cooked through, approximately 10 minutes more. (Baking Part 1: 10 minutes)

Remove the chicken strips from the oven. Add a dash more hot pepper sauce to the top of the chicken strips, then return to the oven. Bake until the sauce dries, about 5 minutes. (Baking Part 2: 15 minutes)

For extra crispy strips, consider using an air fryer instead of baking. Adjust cooking time accordingly.
Feel free to experiment with different hot sauces to customize the heat level.
Serve immediately with your favorite dipping sauce, such as ranch, blue cheese, or a creamy avocado dip.
