For best results, use high-quality walleye fillets. Fresh is always preferable, but frozen fillets, thawed completely, will also work well.
Clarifying the butter removes milk solids, which prevents burning and adds a richer flavor.
Don't overcook the fish! Walleye is delicate and can dry out easily. It's done when it flakes easily with a fork.
Feel free to experiment with other seasonings. A pinch of red pepper flakes, a squeeze of lemon juice, or a dash of smoked paprika can add a unique twist.
If you don't have a grill, you can bake the foil packet in a preheated oven at 375°F (190°C) for about 20-25 minutes.
