For enhanced flavor, toast the walnuts in a dry skillet over medium heat for 5-7 minutes, or until fragrant, before chopping. Be careful not to burn them! If you don't have walnuts on hand, pecans or even chocolate chips would be a delicious substitute. These muffins are best enjoyed within 2-3 days. Store them in an airtight container at room temperature.
