For a milder flavor, soak the jalapeño peppers in ice water for 30 minutes after removing the seeds. This helps to reduce some of the heat. If you don't have baking mix, you can substitute a mixture of flour, baking powder, and salt. These "Armadillo Eggs" can be prepared ahead of time and refrigerated until ready to bake. Add a few extra minutes to the baking time if baking from cold. Serve with your favorite dipping sauce, such as ranch dressing, barbecue sauce, or a spicy aioli.
