Follow The Directions

01

Step

Preheat oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners. (5 minutes)

02

Step

In a large bowl, prepare the muffin mix according to package instructions, substituting 1/4 cup applesauce for 1/4 cup of the oil. (2 minutes)

03

Step

Gently fold in the diced banana, 3/4 cup of the sliced almonds, and the chocolate chips. (3 minutes)

04

Step

Divide the batter evenly among the prepared muffin cups. Sprinkle the remaining 1/4 cup sliced almonds over the tops of the muffins. (5 minutes)

05

Step

Bake for 15-20 minutes, or until a wooden skewer inserted into the center comes out clean. (20 minutes)

06

Step

Let the muffins cool in the tin for 10 minutes before transferring them to a wire rack to cool completely. (10 minutes)

07

Step

Store in an airtight container at room temperature for up to 4 days.

For a richer flavor, use dark chocolate chips or finely chopped dark chocolate.
If you don't have cinnamon applesauce, plain applesauce with a pinch of cinnamon works just as well.
Toast the almonds lightly before adding them to the batter for enhanced flavor.
For moister muffins, add a tablespoon of sour cream or Greek yogurt to the batter.
These muffins freeze well. Wrap individually and store in a freezer bag for up to 2 months.

The applesauce adds a nice touch of moisture. I'll definitely make these again.
