For extra flavor, sauté the chopped onion and garlic in a little olive oil until softened before adding them to the meatloaf mixture. Feel free to add other vegetables to the meatloaf, such as diced bell peppers, carrots, or celery. For a spicier meatloaf, add a pinch of red pepper flakes to the mixture. Meatloaf can be made ahead of time and frozen before baking. Wrap tightly in plastic wrap and aluminum foil. Thaw completely in the refrigerator before baking as directed. Serve with mashed potatoes, green beans, and a side of ketchup for a classic meal.
