In a medium bowl, gently toss the diced strawberries with 3 tablespoons of white sugar. Allow the mixture to macerate for 10-15 minutes, until the strawberries release their flavorful juices. Stir in the cornstarch, vanilla extract, and 1/8 teaspoon of salt until well combined. Set aside.

In a separate bowl, prepare the streusel topping. Combine the quick-cooking oats, all-purpose flour, 1/4 cup of white sugar, cubed salted butter, and remaining 1/8 teaspoon of salt. Using your fingertips or a pastry blender, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Preheat your air fryer to 350°F (175°C). Lightly spray four individual-sized ramekins with nonstick cooking spray.

Evenly distribute the macerated strawberry mixture among the prepared ramekins. Sprinkle the streusel topping generously over the strawberry filling in each ramekin.

Carefully place the ramekins into the preheated air fryer. Air fry for 10-12 minutes, or until the streusel topping is golden brown and the strawberry filling is bubbling.

Remove the crisps from the air fryer and let them cool slightly before serving. Enjoy warm, plain, or topped with a scoop of vanilla ice cream or a dollop of whipped cream.

For a richer flavor, use brown sugar in the streusel topping.
If you don't have ramekins, you can make one larger crisp in a small baking dish. Adjust the air frying time accordingly.
Feel free to experiment with other fruits, such as blueberries, raspberries, or peaches.
Adjust sweetness to your preference by adding more or less sugar.
