Preheat an air fryer to 370 degrees F (190 degrees C) according to manufacturer's instructions. (5 minutes)

In a small bowl, combine cumin, smoked paprika, ancho chile powder, garlic powder, coriander, salt, and pepper. Slice the chicken tenderloins lengthwise into 1/2-inch strips.

In a large bowl, combine the bell pepper strips and onion slices. Toss with 1 tablespoon of olive oil, then sprinkle half of the seasoning mixture over the vegetables. Toss until evenly coated. Place vegetables in the bottom of the air fryer basket.

In a separate bowl, combine the chicken tenderloin strips and the remaining 1 tablespoon of olive oil; toss to combine. Sprinkle the remaining seasoning mixture on the chicken strips and toss to coat evenly. Place the chicken strips on top of the vegetables in the air fryer basket.

Air fry until the chicken is cooked through and the vegetables are tender-crisp, about 10 minutes. Ensure internal temperature of chicken reaches 165°F (74°C).

Squeeze lime juice over all the ingredients in the air fryer basket. Serve immediately on warm flour tortillas with your favorite toppings.

For best results, don't overcrowd the air fryer basket. Cook in batches if necessary to ensure even cooking.
Adjust the amount of ancho chile powder to your desired level of spiciness.
Warming the tortillas in a dry skillet or microwave will make them more pliable.
Feel free to substitute other vegetables, such as red bell peppers, for the green bell pepper.
Make sure that the chicken is cooked through, with no pink meat remaining. If the vegetables are cooking too fast, you can take them out halfway through the cooking time.
These are delicious served with a side of Spanish rice and refried beans.
