Follow The Directions

01

Step

Prepare the Greens: Thoroughly wash and dry the parsley and cilantro. (5 minutes)

02

Step

Blend the Base: In a food processor, combine the parsley, cilantro, ice cubes, chiles, garlic, lemon juice, lemon zest, cumin, coriander, salt, and pepper. Drizzle in 2 tablespoons of extra-virgin olive oil. (2 minutes)

03

Step

Achieve the Perfect Consistency: Blend until a smooth paste forms, adding more olive oil gradually until the desired consistency is reached. (3-5 minutes)

04

Step

Rest and Mellow: Transfer the Zhug to a covered container and refrigerate for at least 1 hour to allow the flavors to meld and deepen. (60 minutes)

For a milder Zhug, remove the seeds and membranes from the chiles before blending.
Adjust the amount of chile peppers to suit your spice preference.
To preserve the vibrant green color, use ice cubes and avoid over-processing the herbs.
Zhug can be stored in an airtight container in the refrigerator for up to 2 weeks. Ensure it's covered with a thin layer of olive oil to prevent oxidation.
