Follow The Directions

01

Step
2 hrs

Prepare Ice Cream Maker: Place the bowl of your ice cream maker in the freezer. Ensure it's thoroughly chilled according to the manufacturer's instructions. (Prep time: 2 hours minimum, preferably overnight)

02

Step
10 mins

Create the Custard Base: In a medium-sized saucepan, whisk together the heavy whipping cream, granulated sugar, and egg yolks. Cook over medium-low heat, stirring constantly with a heat-resistant spatula, until the mixture thickens slightly and coats the back of a spoon. Be careful not to let it boil. (Cook time: 10-15 minutes)

03

Step
8 hrs

Infuse with Coffee: Remove the saucepan from the heat and immediately add the whole roasted coffee beans. Stir gently to ensure the beans are fully submerged in the cream mixture. Transfer the mixture to a heat-safe bowl, cover tightly with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and refrigerate. (Chill time: 8 hours to overnight)

04

Step
5 mins

Strain and Finish: Strain the coffee beans out of the chilled cream mixture using a fine-mesh sieve. Discard the used coffee beans. Stir in the whole milk, vanilla extract, and sea salt until well combined. (Prep time: 5 minutes)

05

Step
20 mins

Churn to Perfection: Pour the coffee-infused cream mixture into the prepared ice cream maker. Process according to the manufacturer's instructions until the ice cream reaches a soft-serve consistency. (Churn time: 20-30 minutes)

06

Step
2 hrs

Harden (Optional): For a firmer texture, transfer the ice cream to an airtight container and freeze for an additional 2-3 hours before serving.

For a more intense coffee flavor, use a darker roast of coffee beans.
If you don't have an ice cream maker, you can still make a semi-freddo version by freezing the mixture in an airtight container, stirring every hour for the first 3-4 hours to break up ice crystals.
A pinch of cardamom or a splash of coffee liqueur can add an interesting twist to the flavor profile.
Make sure your ice cream maker bowl is completely frozen before churning, otherwise the ice cream may not set properly.

A bit too much coffee flavor for my taste, I'll try reducing the amount of beans next time.

I was skeptical about using whole beans, but it really makes a difference. The ice cream is incredibly smooth and flavorful.
