Pour the sugar syrup into a double boiler along with the heavy cream and milk. Whisk until the syrup is fully incorporated into the cream and milk mixture. Whisk in the egg yolks and instant coffee until everything is smoothly combined. (2 minutes)

Place the double boiler insert over (but not touching) a pan of gently simmering water. Cook, stirring constantly with a heat-resistant spatula or wooden spoon, until the custard has thickened enough to coat the back of a spoon. This should take about 8-12 minutes. Be careful not to overcook the custard, as it may curdle.

Pour the custard through a fine-mesh strainer into a clean bowl to remove any lumps or cooked egg particles. Stir in the finely ground coffee. (2 minutes)

Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, until completely chilled. (4+ hours)

Pour the chilled custard into your ice cream maker and freeze according to the manufacturer's instructions. (20-30 minutes)

Once the ice cream is churned to a soft-serve consistency, transfer it to an airtight container and freeze for at least 2 hours to harden completely before serving. (2 hours)

For a stronger coffee flavor, use espresso powder instead of instant coffee.
Adjust the amount of coffee to your personal preference. Start with the recommended amount and add more to taste.
Make sure the custard is fully chilled before churning for the best ice cream texture.
If you don't have a double boiler, you can create one by placing a heat-safe bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn't touch the water.
Serving suggestion: Garnish with chocolate-covered coffee beans or a dusting of cocoa powder.
