Step

In a large, deep skillet or Dutch oven, cook bacon over medium-high heat until crispy, about 8-10 minutes. Transfer bacon to a paper towel-lined plate to drain. Once cooled, crumble and set aside.

Melt butter in the same pot over medium heat. Add onion and garlic; cook, stirring occasionally, until softened and lightly golden, about 6-8 minutes. Scrape the onion-garlic mixture into a small bowl. Remove garlic clove, mash, and return to the bowl.

Place green beans, wax beans, and carrots into the pot. Pour in chicken broth and enough water to just barely cover the vegetables. Season with salt. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer for 15 minutes.

Stir in potatoes and cook until tender, about 25-30 minutes.

Stir in the garlic-onion mixture and cream. Return to a gentle simmer.

In a small bowl, whisk together flour and 1/2 cup water until smooth. Gradually pour the flour mixture into the pot, stirring constantly to prevent lumps. Cook and stir until the soup has thickened slightly, about 10-12 minutes.

Serve hot, garnished with crumbled bacon.

For a vegetarian version, omit the bacon and use vegetable broth.
Feel free to add other seasonal vegetables, such as corn kernels or zucchini.
Adjust the amount of cream to your liking for a richer or lighter dish.
If you prefer a thicker soup, use 2 tablespoons of flour instead of 1.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
