Marinate the Salmon: In a mixing bowl, gently combine the salmon pieces with 2 tablespoons of extra virgin olive oil and 4 cloves of crushed garlic. Ensure the salmon is well-coated, then refrigerate for at least 30 minutes to allow the flavors to meld. (30 minutes)

Preheat the Oven: Set the oven to 350 degrees F (175 degrees C). Prepare a baking sheet by lining it with aluminum foil.

Bake the Salmon: Place the marinated salmon pieces onto the prepared baking sheet. Season with salt and dried thyme leaves. Create a sealed foil pouch by folding the foil over the salmon. Bake in the preheated oven until the salmon is cooked through and no longer translucent in the center, approximately 15 to 20 minutes. (15-20 minutes)

Cook the Pasta: While the salmon is baking, bring a large pot of lightly salted water to a rolling boil over high heat. Add the egg noodles and cook, uncovered, stirring occasionally, until the pasta is al dente, about 5 minutes. (5 minutes)

Prepare the Sage Butter Sauce: Drain the cooked pasta thoroughly in a colander and return it to the pot. In a small saucepan, melt the butter over medium heat until it lightly browns. Stir in the chopped fresh sage and 2 cloves of crushed garlic until the sage wilts. Add 1 tablespoon of olive oil, thawed frozen peas, the juice of 1 lime, and 1 1/2 teaspoons of salt. Mix well.

Combine and Serve: Pour the sage butter sauce over the pasta and toss gently to coat evenly. Transfer the pasta to a serving bowl. Carefully remove the baked salmon from the foil pouch and arrange it on top of the pasta. Squeeze the juice of the remaining lime over the dish before serving.

For an enhanced flavor, consider using fresh thyme instead of dried. If fresh sage is unavailable, dried sage can be substituted, but use sparingly as its flavor is more concentrated.
To ensure the salmon remains moist during baking, make sure the foil pouch is tightly sealed. You can also add a splash of white wine to the pouch for extra flavor and moisture.
Adjust the amount of lime juice to your preference. A little zest can also add a bright, citrusy note to the dish.
