In a blender, combine the olive oil, tequila, cilantro, lime juice, pineapple juice, white wine vinegar, garlic salt, pepper, oregano, and seasoned salt. Blend until smooth and emulsified. (2 minutes)

Place the shrimp in a non-reactive bowl (glass or ceramic). Pour the tequila-lime mixture over the shrimp, ensuring they are fully coated. Toss gently to combine. Cover the bowl tightly with plastic wrap and marinate in the refrigerator for at least 2 hours, or preferably up to 4 hours. (2 hours)

Heat a large skillet over medium heat. Add the marinated shrimp to the skillet in a single layer, being careful not to overcrowd the pan. Cook, stirring occasionally, until the shrimp turn pink and opaque and are cooked through. (15 minutes)

Serve immediately. Garnish with extra cilantro and lime wedges, if desired.

For the best flavor, use fresh lime juice and high-quality tequila.
Do not over-marinate the shrimp, as the acid in the lime juice can start to 'cook' them and make them rubbery.
If you don't have fresh oregano, you can substitute 1 teaspoon of dried oregano.
Serve with rice, quinoa, or grilled vegetables for a complete meal. Great in tacos too!
