Follow The Directions

01

Step

In a medium bowl, whisk together the honey, rice vinegar, tomato paste, pineapple juice, and soy sauce until well combined. Set aside. (Prep time: 5 minutes)

02

Step

In a separate small bowl, whisk together the water and cornstarch until smooth. This will be used to thicken the sauce. Set aside. (Prep time: 2 minutes)

03

Step

Pat the shrimp dry with paper towels. This will help them get a nice sear. In a medium bowl, combine the shrimp with the kosher salt and black pepper. Toss to ensure the shrimp are evenly seasoned. (Prep time: 5 minutes)

04

Step

Heat 1 tablespoon of vegetable oil and the sesame oil in a wok or large sauté pan over medium-high heat. The wok should be hot before adding the shrimp. (Prep time: 3 minutes)

05

Step

Add the shrimp to the hot wok in a single layer. Allow the shrimp to cook undisturbed for 1 minute to develop a slight sear. Stir and cook for an additional 30 seconds, or until the shrimp are pink and cooked through. Transfer the shrimp to a clean plate and set aside. (Cook time: 2 minutes)

06

Step

Add the remaining 1 tablespoon of vegetable oil to the wok. When heated, add the diced red bell pepper and sliced zucchini. Stir-fry for 2 minutes, or until the vegetables are slightly tender. (Cook time: 2 minutes)

07

Step

Add the minced garlic and fresh ginger to the wok. Stir-fry until fragrant, about 30 seconds. Be careful not to burn the garlic. Add the pineapple chunks and stir-fry for another 30 seconds. (Cook time: 1 minute)

08

Step

Pour in the reserved sweet and sour sauce. Stir and cook until the sauce begins to simmer, about 2 minutes. (Cook time: 2 minutes)

09

Step

Re-whisk the cornstarch mixture to ensure it's smooth, as the cornstarch tends to settle. Gradually add the cornstarch mixture to the center of the wok, stirring constantly until the sauce has thickened to your desired consistency, about 30 seconds. (Cook time: 1 minute)

10

Step

Return the cooked shrimp to the wok. Stir to combine the shrimp with the sauce and vegetables. Cook until the shrimp are warmed through, about 2 minutes. (Cook time: 2 minutes)

11

Step

Transfer the Sweet and Sour Shrimp to serving plates. Garnish each serving with sliced green onions and sesame seeds. Serve immediately and enjoy! (Prep time: 2 minutes)

For extra flavor, marinate the shrimp in a mixture of soy sauce, ginger, and garlic for 30 minutes before cooking.
If you don't have fresh pineapple, canned pineapple chunks work well too. Just be sure to drain them well.
Adjust the amount of honey and rice vinegar to suit your personal preference for sweetness and sourness.
Serve over steamed rice or noodles for a complete meal.
