Feel free to adjust the amount of red pepper flakes to your preference. For a milder flavor, start with 1 teaspoon.
To add more depth of flavor, consider adding a tablespoon of tomato paste to the sauce while it simmers.
Eggplant can be bitter. To avoid this, salt the diced eggplant and let it sit for 30 minutes before cooking. Rinse and pat dry before adding to the skillet.
