Follow The Directions

01

Step

Preheat oven to 325°F (165°C). Line 18 muffin cups with paper liners. (5 minutes)

02

Step

In a large mixing bowl, combine the white cake mix, water, egg whites, vegetable oil, 1 tablespoon of cinnamon, vanilla extract, and lemon extract. Mix on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes until well combined.

03

Step

Fill each prepared muffin cup approximately 2/3 full with batter.

04

Step

In a small bowl, mix together the granulated sugar and the remaining 1 tablespoon of cinnamon. Sprinkle this mixture evenly over the cupcake batter in each cup.

05

Step

Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean. (18 minutes)

06

Step

Remove from oven and let cupcakes cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.

07

Step

While the cupcakes are cooling, prepare the frosting: In a large bowl, beat the softened butter with an electric mixer until light and fluffy, about 2-3 minutes.

08

Step

Gradually add the confectioners' sugar, 3 tablespoons of honey, and 0.5 teaspoon of cinnamon to the butter, mixing on low speed until just combined.

09

Step

Add milk, 1 tablespoon at a time, until the frosting reaches your desired consistency – it should be smooth and easily pipeable.

10

Step

Once the cupcakes are completely cool, transfer the frosting to a piping bag fitted with your desired tip, or use a plastic bag with a corner snipped off.

11

Step

Pipe the frosting onto each cupcake in a swirl pattern. Finally, drizzle each frosted cupcake with a touch of honey.

For a richer flavor, use brown butter in the frosting.
If the frosting is too thick, add a little more milk, one teaspoon at a time, until the desired consistency is reached.
Store frosted cupcakes in an airtight container at room temperature for up to 3 days.
For an extra touch, sprinkle a pinch of cinnamon on top of the frosted cupcakes.

I found the frosting a little too sweet for my taste. Next time, I'll reduce the amount of confectioners' sugar.

My frosting was a bit runny, even after adding the confectioners' sugar. I think I added too much milk.
