For an even richer flavor, consider adding a splash of dry white wine or a tablespoon of tomato paste to the sofrito while it's simmering. Leftover sofrito is fantastic stirred into rice, beans, or used as a base for soups and stews. If you prefer a thicker sauce, remove the chicken thighs from the skillet after simmering and whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) to the sauce. Simmer until thickened, then return the chicken to the skillet.
