Step

Place the pork butt in a slow cooker, positioning it with the fattier side facing upwards. Pour water and orange juice into the slow cooker. Season the pork and liquid generously with salt and pepper. (5 minutes)

In a small bowl, combine the minced garlic and stone-ground mustard. Spread this mixture evenly over the top of the pork butt. Sprinkle the chopped onion over the pork. (5 minutes)

Cover the slow cooker and cook on Low heat for 6 to 8 hours, turning the butt a few times during cooking. The pork is ready when it easily falls apart when pulled with a fork. (6-8 hours)

Carefully remove the pork from the slow cooker and let it rest until it's cool enough to handle. Trim away and discard any large chunks of fat. Shred the remaining pork into strands using two forks. (20 minutes)

Return the shredded pork to the slow cooker and stir to coat it with the remaining juices. Serve the pulled pork using a slotted spoon. (5 minutes)

For a richer flavor, sear the pork butt in a hot skillet before placing it in the slow cooker.
Adjust the amount of stone-ground mustard to your liking. For a spicier kick, add a pinch of red pepper flakes.
Serve the pulled pork on toasted buns with your favorite toppings, such as coleslaw, pickles, or barbecue sauce.
